We call them “brasciole” and they are considered a holiness. We use red meat, enriched with parsley and garlic, slowly cooked in tomato sauce for about 6 hours. This recipe represents the richness of Apulia.
Meat rolls: beef, parsley, garlic, bread crumbs.
Sauce: tomato sauce, red wine, extra virgin olive oil, grated Grana cheese, onion , garlic, salt, sugar.
